Sundays are for pancakes as pancakes are for Sundays! Does it make any sense? I am sure you will agree with me after seeing the beautiful pancakes I made this Sunday morning:
I know, right?! I can’t even believe they turned out so good, since at the beginning of the week I tried to do some in the oven and they… got literally glued to the vegetable paper. Anyway, this time I used a pan and with a bit more mindfulness the result was pretty delicious.
So here is what you need for the pancake mixture:
- 1 smashed banana
- 1 cup of plain flour
- 1 cup of almond milk
And for the topping:
- half of a mango
- a dozen of peanuts
- more cinnamon (if you really like it; if not you can use something else or don’t use anything at all – your pancakes, your decision)
In a mixer, blend together the flour, the milk and your smashed banana. Add some cinnamon to the mixture if you are a cinnamon lover (you probably already guessed I am one). Then put a pan with some coconut oil (just a tiny bit!) at medium heat and when it’s hot enough you can start doing your first pancake. I like them not too big and not too small, so whatever you prefer just make sure you are aware of the mixture amount you put in the pan for each pancake.
Now, for the super topping: cut your mango and blend it in a mixer with the peanuts by adding just a tiny bit of water. And when I say tiny it’s really tiny, so no more than 10 ml, if you want a precise number. You want your mixture to have the right texture, not too watery and not too thick, hence have a peek once or twice while you’re making it.
And there you go, now you just need to put your awesome topping on your pancakes, sprinkle them with a little bit more cinnamon if you like and… eat them all!
